Abstract
Papaver somniferum L., has been cultivated since prehistoric times, due to its pharmaceutical and nutritional properties, it has been given applicability in food processing, traditional medicine, ayurvedic medicine and pharmaceutical industry. However, other biomolecules of interest in these seeds are unknown, so in order to generate a broader knowledge about the seeds of Papaver somniferum L., in the present work its seeds were used to determine the proximal analysis. Subsequently, phytochemical analysis was performed. The quantification of secondary metabolites was carried out by UV/vis spectrophotometry. The ABTS•+ (2,2'-azino-bis(3-ethylbenzothiazolin)-6-sulfonic acid) methodology was used to determine antioxidant activity. In the results of nutritional composition, the presence of fibre and protein stood out with 56.2 g and 24.6 g, respectively; while the phytochemical analysis revealed the presence of flavonoids and phenolic compounds. In the quantification of secondary metabolites, phenolic acids 0.0825 mg EAC/g MS, proanthocyanidins 0.0658 mg ECT/g MS, anthocyanins 3.0937 mg EC3G/g MS, as well as its antioxidant activity with 87.86 % inhibition. Therefore, it is concluded that the extract possesses different bioactive compounds with high antioxidant capacity.
